I walked in the kitchen this morning and found my better (and fitter) half whipping these up.
My son had a friend over so I thought she was making them breakfast since I know SHE doesn’t eat pancakes or even much flour – have you seen her abs?
Luckily for me, she has been looking around for great, healthy recipes… and she definitely found one!
A Healthy Breakfast?
One word… Awesome!
Although it is a distant second because I am too busy munching to think too much, another word comes to mind… Healthy!
I rarely think too much about breakfast and even less often stop to enjoy it, but these were great! I fall back on egg whites, fruit and oats or a protein shake most of the time, but these may become part of my routine.

4 eggs
2 ripe bananas
1/2 teaspoon cinnamon
1/2 cup rolled oats
1 scoop protein powder (plain or vanilla)
Blueberry Topping
1 cup frozen blueberries
2 Tablespoons honey
